- 2 ripe bananas, mashed
- 1 ½ cups rolled oats
- ½ cup fresh blueberries
- ¼ cup chopped nuts (walnuts or almonds)
- ¼ cup honey or maple syrup
- 1 teaspoon vanilla extract
- ½ teaspoon cinnamon
- ½ teaspoon baking powder
- ¼ teaspoon salt
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mash the bananas in a large mixing bowl until smooth.
- Add oats, nuts, honey, vanilla, cinnamon, baking powder, and salt to the bowl. Mix well.
- Gently fold in the blueberries, being careful not to mash them.
- Scoop tablespoons of the dough onto the baking sheet and flatten slightly with a spoon.
- Bake for 12-15 minutes, or until the cookies are golden brown.
- Cool for 5 minutes on the baking sheet before transferring to a wire rack.
- Enjoy warm or store in an airtight container for up to 3 days.
Notes
- Use frozen blueberries if fresh ones aren’t available, but do not thaw them before mixing.
- You can substitute honey/maple syrup with a sugar-free alternative for a lower-carb version.
