For the Chicken Marinade:

  • 2 large boneless, skinless chicken breasts (or thighs)
  • 3 tbsp olive oil
  • 3 tbsp Greek yogurt
  • 2 tbsp lemon juice
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper

For the Tzatziki Sauce:

  • 1 cup Greek yogurt
  • 1 cucumber, grated and drained
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tbsp fresh dill, chopped
  • ½ tsp salt

For the Gyros:

 

  • 4 pita breads or flatbreads
  • ½ red onion, thinly sliced
  • ½ cup cherry tomatoes, halved
  • ½ cup shredded lettuce
  • ½ cup crumbled feta cheese (optional)

Instructions

1. Marinate the Chicken

  1. In a bowl, mix olive oil, Greek yogurt, lemon juice, garlic, oregano, cumin, paprika, salt, and black pepper.
  2. Add chicken, coat well, cover, and refrigerate for at least 30 minutes (or up to 24 hours for deeper flavor).

2. Make the Tzatziki Sauce

  1. Grate the cucumber and squeeze out excess liquid.
  2. Mix with Greek yogurt, olive oil, lemon juice, garlic, dill, and salt.
  3. Refrigerate for at least 15 minutes before serving.

3. Cook the Chicken

  1. Heat a grill pan or skillet over medium-high heat.
  2. Cook chicken for 5-6 minutes per side, or until golden brown and fully cooked.
  3. Let it rest for 5 minutes, then slice into thin strips.

4. Assemble the Gyros

  1. Warm the pita bread on a dry pan or grill for 30 seconds per side.
  2. Spread tzatziki sauce on each pita.
  3. Add sliced chicken, red onion, cherry tomatoes, lettuce, and feta.
  4. Fold and serve immediately!

Notes

  • For extra flavor, let the chicken marinate overnight.
  • Make it low-carb by serving in a lettuce wrap or over a Greek salad.
